Cowboy Cookies
Ingredients
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons cinnamon
- 1⁄2 teaspoon sea salt
- 1 1/2 cups rolled oats
- 2 cups semisweet chocolate chips
- 1 cup pecans, chopped and toasted
Directions
Heat the oven to 350° F.
Cream the butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla and beat until fluffy.
Mix together the flours, baking powder, baking soda, cinnamon, and salt, and add to butter, sugar and egg mixture. Beat until well incorporated, and then stir in oats, chocolate chips, and roasted pecans.
Roll dough into walnut-sized balls, place the sheet and bake for 14-17 minutes. Allow to cool before serving.
